I am one to admit, I have a craving for salty snacks, especially chips. I can eat a whole family sized bag of chips in one sitting (don’t know if I should brag about that, but it is true!) This salty food craving inspired me to find a healthy alternative to potato chips. Ever since I found this recipe from Five Heart Home, I seriously crave these more than I ever craved potato chips! And they’re made from zucchini.

I’m writing today to let you in on a little secret. I don’t cook from a recipe most nights of the week. The majority of my family’s meals are a thoughtful hodgepodge of random components from the fridge. And yes, while I may post lots of recipes on my blog, and love browsing the internet for inspiration, it’s just not realistic to spend hours cooking in the kitchen every day.

Cooking healthy meals that are delicious and satisfying can be hard work for us moms! Lately, I’ve been struggling to curate a healthy breakfast, lunch and dinner that include all of the important nutrients and vitamins, only to have my kids come to the table with a stubborn palate.
