Even if it’s not Cinco de Mayo can we just celebrate with tacos every Tuesday? We try to as much as possible! Last week we celebrated with the easy sheet pan chicken I posted a few weeks ago and tonight we might go a little crazy with Sheet Pan Shrimp. I have had frozen shrimp in the freezer for awhile, always keep a bag in there for easy meals! The second meal is simple and like a Mexican Lasagna and have mostly everything. I could eat Mexican every night!

Sheet Pan Shrimp

Ingredients
Limes or lime juice
Taco Seasoning or Home Made Taco Seasoning (recipe below)
Peppers-I buy the three pack every time I go shopping
Cilantro (don’t have today, opps)
Red Onion
Shells-Also don’t have so using whole wheat wraps

Directions
Thaw the shrimp under water and take the tail off
Slice the peppers and Onion long ways
Throw all of that on a pan and add olive oil, seasoning, lime and if you have cilantro
Bake in the oven for 25 minutes on 350

This is great as leftovers on a salad, fajitas or since we don’t have taco shells today we have whole wheat wraps that I will just melt cheese in and use, then I should only need one instead of 3 mini tacos!

Guac
Salsa
Rice
Beans
Shredded Cheese

Easy Mexican Casserole
This recipe has the most delicious layers of cheese, ground beef, tortillas and more. This casserole is perfect any day of the week. Found this recipe from Eating on a Dime and is so true because you have mostly everything!

Ingredients
  • 1 pound ground beef
  • 2 tablespoons taco seasoning
  • 1 can chili Beans
  • 1 can crushed tomatoes 15 oz
  • 12-16 corn tortillas cut into quarters
  • 1 cup sour cream
  • 2 cups  shredded cheddar cheese
Instructions
Brown meat in large skillet. Drain.
Add taco seasoning, beans, diced tomatoes, and crushed tomato to the skillet.
Spray 13×9 casserole dish. Place a layer of tortillas on the bottom.
Pour half of the meat mixture over the tortillas. Spread with half the tortillas and Sprinkle with half the cheese. Place another layer of tortillas on top. Pour the remainder of the meat mixture over the tortillas, spread more sour cream and sprinkle with the rest of the cheese. (I personally don’t like sour cream so I don’t do this part!)

Bake at 350 for 20 minutes or until cheese is nice and bubbly.

It’s like a Mexican Lasagna and delicious!

What all do you need to make homemade taco seasoning mix:

  • Chili powder
  • Cumin
  • Onion Powder
  • Garlic Salt
  • Pepper
  • Salt
  • Paprika
  • Cayenne or Red Pepper Flakes
