With Super Bowl right around the corner, how can we try to stay on track while eating some delicious apps and watching the big game. Even though there are no local teams in the game, and it starts at 6pm, on a Sunday let’s still try to have fun with some easy and healthy appetizers!

Guacamole Deconstructed & Skewered
Makes about 20

Ingredients

  • 1 ripe avocado, peeled and cored

  • 6 ounces feta cheese block, not crumbles

  • 2 dozen small cherry tomatoes

  • 2 tablespoons fresh cilantro

  • 1 clove garlic, minced

  • 1/2 teaspoon cumin

  • 1/4 teaspoon chipotle ground pepper

  • 1/4 teaspoon Sriracha

  • 2 tablespoons fresh lime juice

  • 1 tablespoon olive oil

  • 20 short wooden skewers or toothpicks

Instructions

  1. Cut the avocado and feta cheese into pieces the same size as the tomato.

  2. Place the cilantro in a bowl with the garlic, cumin, pepper, Sriracha and 1 tablespoon of the lime juice. Whisk to combine and then slowly add the olive oil and mix.

  3. Gently place the avocado, feta and tomatoes into the marinade, turning to coat all sides. Allow to sit for at least one hour in the refrigerator.

  4. Ingredients
    • 1 pound ground beef
    • 1 yellow onion diced
    • 1 clove garlic minced
    • 1 oz. Taco Seasoning
    • 1 cup black beans
    • 1 Roma tomato diced
    • 3 bell peppers cut in half
    • ¾ cup salsa
    • ¾ cup Sour Cream
    • 2 cups shredded Mexican Cheese

      Take out the ingredients and begin to thread them on the skewers. When complete, pour the last tablespoon of lime juice on top and serve immediately.

      Taco Stuffed Mini Peppers

      These healthy, low carb Taco Stuffed Peppers are oven baked and can be made with ground beef, turkey, or shredded chicken! And easy weeknight dinner with endless topping options!

      Ingredients
      • 1 pound ground beef
      • 1 yellow onion diced
      • 1 clove garlic minced
      • 1 oz. Taco Seasoning
      • 1 cup black beans
      • 1 Roma tomato diced
      • Bag of mini bell peppers cut in half
      • ¾ cup salsa
      • ¾ cup Sour Cream
      • 2 cups shredded Mexican Cheese
    Instructions
    1. Preheat oven to 350 degrees.
    2. Place the empty bell peppers (hollow side- up) on a greased baking pan, and bake in the oven for 15 minutes.

    3. Meanwhile, in a frying pan over medium heat, add ground beef, onions, and garlic and cook for 10 minutes.

    4. Add the taco seasoning and 3/4 cup water. Bring to a boil and then reduce the heat to medium-low.
    5. Add the black beans and tomatoes and simmer for 5 minutes.
    6. Scoop the taco filling inside each of the baked peppers. Top each with cheese. Bake in the oven until the cheese is melted.

    7. Serve with salsa and sour cream
      Lastly Add a Chili recipe (from past blog posts or your own) with some Siete paleo chips and use the chili as a dip!
