While its staying light out later and the weather in the 50’s I couldn’t help but want to grill! Nothing fancy except Bubba Burgers, Applegate Hot Dogs and Sweet Potato fries. I also made the Instapot Creamy Gnocchi Soup from a few weeks ago so that will last us! With some salads and sandwiches for lunch and hard boiled eggs and smoothies for breakfast its a simple week. This is the first time I repeated a recipe since January but least it’s a good one!

I did however whip up some lactation cookies for a friend who just had a baby which I loved when I as breast feeding, they were so good my husband use to eat them too and I swear they helped! I got this recipe from Genius Kitchen and there are a ton of recipes out there but as long as there are oats and brewers yeast then they can be considered “lactation cookies”. This made a ton of cookies so she will definitely be freezing some!

INGREDIENTS

  • 1cup butter
  • 1cup sugar
  • 1cup firmly packed brown sugar
  • 4tablespoons water
  • 2tablespoons flax seed meal
  • 2eggs
  • 1teaspoon vanilla
  • 3cups flour
  • 1teaspoon baking soda
  • 1teaspoon salt
  • 3cups oats
  • 1cup chocolate chips
  • 2 -4tablespoons brewer’s yeast

    DIRECTIONS

    1. Preheat oven to 350°.
    2. Mix the flaxseed meal and water and let sit for 3-5 minutes.
    3. Beat butter, sugar, and brown sugar well.
    4. Add eggs and mix well.
    5. Add flaxseed mix and vanilla, beat well.
    6. Sift together flour, brewers yeast, baking soda, and salt.
    7. Add dry ingredients to butter mix.
    8. Stir in oats and chips.
    9. Scoop onto baking sheet.
    10. Bake for 12 minutes.

      When someone has a baby it’s always great to bring over a meal, so I would suggest this soup since it makes so much and while it’s in the instapot these cookies are so simple to throw in the Kitchen Aid Mixer and whip ’em up!
