It’s the season for basil! It grows quickly and so much of it, so it’s easy to use for simple recipes.Today we have a Grilled Chicken with Pesto, sun-dried tomatoes pasta (or spaghetti squash for a healthier option) and a Creamy Avocado Pesto Noodles.
Pesto Sauce
Take all of these ingredients and throw in a blender or food processor, processor or blend on low.
-2 packed cups fresh basil leaves
-1/2 cup good quality extra virgin olive oil
-1/2 cup Parmesan cheese (optional)
-1/3 cup pine nuts (Cashews and walnuts also make a nice pesto);
-3 garlic cloves, minced
-Salt and pepper to taste
Grill up some chicken on the grill and add the sliced chicken, sun-dried tomatoes (or cherry tomatoes) to either fresh pasta or spaghetti squash. Fresh, easy and light!
Creamy Avocado Pesto Noodles
-2 large zucchini (buy them already spiraled)
-1 large avocado
-1 handful fresh basil
-lemon juice from 1/2 lemon
-1 medium garlic clove
-2 tablespoons olive oil
-2 tablespoons water
-salt and pepper to taste
Another easy one, take all the ingredients except the noodles and throw in a blender or food processor and mix on low. When the sauce looks nice and creamy add over softened noodles or zoodles and enjoy!
