INSTANT POT CREAMY GNOCCHI SOUP | FairfieldMoms

Isn’t it funny when you have a whole day to do everything possible, but you do nothing from your to do list?? I ended up making all of this Monday morning instead of Sunday…opps! I went to Stew’s on Thursday to get a few things and ended up doing all of the food shopping – it’s so hard not to when everything looks so good! Trying to also add some keto options for everyone on the keto train which sounds very similar to paleo.

 

This weeks menu is hard boiled eggs, green smoothies, flank steak, gnocchi and sausage soup, brussels with bacon and maple syrup, kale and brussels mix; (enough dinner items for lunch) and froyo just in case we need something sweet (definitely not paleo)!

 

There was a great deal on flank steak and it was huge, so we ate last night and we’ll have it another night and in salads for lunch. Threw that on a grill pan with salt and pepper. Put brussels and kale in a sauté pan with a little olive oil and pepper. Also put the brussel sprouts in a pan with chopped up bacon (cooked a whole pound when making breakfast Sunday), and you can do balsamic or maple syrup for that. For the chimichurri: threw fresh parsley, cilantro, olive oil, mined garlic and salt and pepper in the blender till looked like a sauce, soooo good!

 

I had a recipe for something else which I’ll save for next week but after I saw this on my instagram Sunday night:

I just had to make it! I actually had all the ingredients and anything with cauliflower gnocchi I need to eat! I found it at paloemg once again and switched from the cauliflower gnocchi from Trader Joes to the Capello’s kind to make it more paleo.  Anything in the instapot is great and so easy!

 

These meals won’t disappoint and can be ready in under an hour! Just make sure there is no one in your way!
