Healthy Chicken Cutlets! | FairfieldMoms

Just because you’re away, doesn’t mean you have to eat really bad. We are away this week in Florida, at the Villages, my Mother-in-Law’s, checking out the retired life! We’ll probably eat out a few times, she’ll cook a little, and we went shopping for snacks.

 

She made chicken cutlets last night – I feel like all moms make them similar and they are delish. We changed it up some by baking a few and using coconut oil to fry in just to feel better about eating them. Added some grilled asparagus and only had a little mashed potatoes! Also, I’m making a beef stir fry tomorrow night and salads or sandwiches at lunch. The chicken is great on top of salads! Veggie filled omelets for breakfast. Yogurt and fruit for snacks!

 

Chicken cutlets (great for kids too)

Slice chicken cutlets in half and pound them to be thin (she brought 5lbs of ckn)
dip in flour then whisked eggs and then bread crumbs
Then on the stove fry in vegetable oil (the normal Italian way) or coconut oil (healthier) or bake at 350 (healthiest).
Dry out on a plate with paper towel and of course eat some while you wait!

We have enough leftovers for lunch today and more!

 

We also are whipping this up Ginger Beef Stir Fry since it looks so good!

 

The best way to continue to try to eat healthy on vacation is to plan and make some good choices when going out. Not going to lie and say we didn’t eat Chick-Fil-a- after landing yesterday! It’s what we do on vaca! Everything in moderation!
