Chopped Cobb Salad

Serves 4

 

Ingredients:

Head of iceberg lettuce
Head of Romaine lettuce
6 oz turkey or chicken
10 thawed frozen artichokes
1 cup hearts of palm
1 avocado
6 oz blue cheese
12 slices of bacon (cooked)
2 large eggs (hard boiled)
3/4 cup red onion
3/4 cup plum tomatoes

Dressing:
2/3 cup white balsamic vinegar
1/2 cup Dijon mustard
3 tsp Italian dressing seasoning mix
1 cup evoo

 

Instructions:

 

Chop everything for the salad & add in blue cheese.  Serve dressing on the side.  Enjoy!

 

 

 

 

Cilantro Turkey Burgers

Serves 4

Ingredients:

 

BURGERS
1 lb lean ground turkey
1/4 cup coconut aminos
1/2 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 tsp chili powder
1/4 tsp onion powder
1/4 cup fresh chopped cilantro
2 tsp extra-virgin olive oil

CREAMY AVOCADO DRESSING
1 avocado, ripe
1/4 cup water
1/4 tsp garlic powder
1/4 tsp salt
Handful of fresh cilantro

 

Instructions:

ADD all ground turkey, coconut aminos, salt, pepper, garlic powder, chili powder, onion powder, and chopped cilantro to a large bowl. Use your hands to combine ingredients.
FORM into four patties. If you’re not grilling immediately or just don’t want to work with the mushy texture of ground turkey place the patties in the refrigerator for a bit.
HEAT the grill to medium-high heat.
BRUSH olive oil on both sides of each burger. Gently place each patty on the grill.
SEAR until brown, about 5 to 6 minutes. Do not flip your burger too early or it may fall apart. When it’s sufficiently browned on one slide, flip. Sear remaining side until browned and patty is cooked through, another 5 to 6 minutes.
While burgers are grilling, COMBINE ingredients for Creamy Avocado Dressing in a blender or food processor. BLEND until smooth.
REMOVE burgers from the grill and ADD toppings like my Creamy Avocado Dressing, red onion, tomato, and lettuce. Enjoy!
