After a week away, I was happy to get back to a routine with a healthy meal plan to start the week. I did a egg frittata again and filled with veggies, chicken sausage and peppers and tacos. This meal prep made for an easy shopping list and even easier meal prep and it helps that all the same veggies were used!
Fill that cart with veggies you and the family like. I got multi color peppers (mini peppers for frittata), red onion, mushroom, spinach, cilantro, avocado and fruit. Picked up two types of chicken sausage, sweet Italian and spicy. Two types of meat, one lb of ground turkey and one lb of ground meat, and a dozen eggs.
While slicing up the veggies, I had one pan for the frittata, so heat up some olive or avocado oil, and add the sliced onion first. I cut up all the peppers, mini peppers for the frittata so as the onions cooked through those in there. I added bigger sliced peppers in another pan for the sausage and peppers meal with a red onion and some olive oil. In the insta pot, I have the chopped meat going with some Taco Seasoning from Trader Joes, 15 minutes on the poultry button. In another pan, I cut the sausage into circles and had those cooking.
When the sausage is cooked add the peppers and onions and mix together.
When the veggies are cooked in the frittata pan add a dozen whisked eggs, cook for 10 minutes on medium then add to the oven on 350 for 15 minutes then done!
When the meat in the insta pot goes off, I put that to the side. I will use this for tacos with whatever toppings you like – we do avocado, cilantro, salsa, side of cauliflower rice (frozen and just cooked on stove).
I add avocado to the top of all these meals and the frittata doesn’t just need to made for breakfast!
