This snow storm calls for some cooking and baking and enjoying some sweet treats is the best part. We recently found Jessica from (@a.sprinkle.of.sweet) who has some fun and easy meals and snacks that are easy to whip up and delicious!

Blueberry Spinach Banana Smoothie Bowl


I love a smoothie bowl that incorporates protein and vegetables! This bowl is so delicious, easy to make, and healthy! It is the perfect breakfast, lunch, or snack. It also sneaks in some spinach!

 

Prep time: 5 minutes

Ingredientes:

-1 cup of frozen blueberries

-1 frozen banana

-1/4 cup baby spinach

-1/3 cup non-fat vanilla greek yogurt

-1 teaspoon hemp seeds

-1/4 cup oat milk (may need more/less)

Toppings:

-Pecan/Almond Granola (I used GF)

-Coconut

-Fresh Berries

-1/2 Sliced banana

-Honey Sesame Almonds

 

Next Step:

-Add all of your ingredients into your blender. Blend to a thick and creamy consistency.

-Add your toppings.

-ENJOY!!

 

Whole Wheat Oatmeal Cashew Butter Cookie Bars



This is my new favorite cookie! I love the creaminess the cashew butter gives this cookie. It is easy to make and has lots of texture with the oats, chocolate chips, and whole wheat flour! This recipe is amazing and adds a healthier twist to your regular chocolate chip cookie.

 

Prep time: 8 minutes Cook time: 17 minutes

Ingredients:

-3/4 cup rolled oats

-1 cup whole wheat flour

-1 teaspoon cinnamon

-1/2 teaspoon baking powder

-1 teaspoon baking soda

-1/2 teaspoon cornstarch

-1/2 teaspoon salt

-2 tablespoons butter (softened)

-2 tablespoons almond oil

-1 large egg

-1/2 cup creamy cashew butter

-1/2 cup dark brown sugar

-2 tablespoons raw honey

-2 tablespoons pure maple syrup

-1 1/2 teaspoons vanilla extract

-1/2 cup dark chocolate chips (and some extra for the drizzle on top)

 

Next Step:

-Preheat oven to 350 F

-In a small bowl combine your oats, whole wheat flour, cinnamon, baking powder, baking soda, cornstarch and salt. Mix with a spoon and set aside.

-In another bowl with a hand or stand mixer combine your butter, oil, dark brown sugar, and mix.

-Add in your egg and mix.

-Add in the honey, maple syrup, cashew butter, vanilla extract and mix until smooth and creamy.

-Add in your flour/oat mixture and mix until fully combined. (1-2 minutes)

-Fold in your chocolate chips.

-Line an 8×8 baking dish with parchment paper and add your cookie batter. Spread evenly.

-Bake for 17 minutes or until the edges are a light golden brown.

-Take out and let cool for 20 minutes, then drizzle with melted chocolate.

-Cut into bars and serve!
