With this crazy time we are living in it’s hard to have everything on hand for meals so we don’t have to run to the store! I haven’t been to Trader Joe’s since March 14th and that is so sad to me! I drove by last week and had tears in my eyes, no joke! I like food shopping and planning my families meals so with everything going on this is a lot more planning for me! I’ve done Instacart in the beginning twice, ordered curbside from the pantry twice, which was great btw and lastly found someone to go shopping for me! My list was long and she charged the same as instacart but was so worth it and she was sending me pictures as she shopped, it was amazing! Since this all started we have been cooking and baking a good amount and I don’t mind it. I enjoy doing it with my daughter, I think she likes it and we know what we are eating. It makes ordering out something to look forward to! I do missing going out to dinner but maybe this will stop us from going out as much!

I found a muffin recipe a few weeks back and its so easy I am now making it every week. They are a great snack but I have been eating them for breakfast and memorized the recipe, that’s when I know something is good! It also helped I had all the ingredients!

Healthy Chocolate Chip Breakfast Muffins

Ingredients

2 tbsp chia seeds
1 and 1/2 cups of Almond Milk
1/4 cup of Maple Syrup
1 tsp of Vanilla
2 brown bananas
3 Cups of Rolled Oats
2 Tbsp of nut butter, I use Almond Butter
1 tsp baking powder
1 tsp cinnamon
Little sea salt
Chocolate Chips (I use Dark chocolate chips to make a tad healthier)

Directions

Add all these ingredients together and mix
Fill about 3/4 up in a muffin pan
Put in oven for 30 minutes on 350 degrees

Don’t know where I found this Chicken Fajitas Sheet Pan Recipe but I am now obsessed and not sure why I ever cooked this any other way! It’s simple and you can make however you want or whatever you like with your fajitas. We used this recipe the first night as fajitas and the next night on top of a salad and in a quesadillas.

Ingredients

1 package of chicken (slice down the middle and then slice long way)
3 pack of peppers (sliced)
1 red onions (sliced)
Taco Mix Package (can use paprika and cumin if you don’t have the taco seasoning)
Cilantro (had only because I planned this meal and now have enough for a while!)
Olive Oil
Taco Shells (We used wheat wraps)

Optional:
Shredded Cheese
Guac
Salsa
Black Beans
Rice

Directions

Take the chicken, peppers and onions and lay them out on the sheet pan
Sprinkle olive oil, seasoning, cilantro over the sheet pan
Bake for 30 minutes on 350 degrees
Let cool for a bit then make your fajitas, salads, taco or quesadilla

You can do this with steak or shrimp, whatever you fancy!

Add a margarita to the meal and you are all set!
